Harvard Beets

A north American Delicacy.

Ingredient

  1. 5 Medium-Size cooked Beets
  2. 1/2 cup sugar
  3. 1 tbsp cornstarch
  4. 1/2 tsp salt
  5. 1/2 cider or white wine vinegar
  6. 1/2 cup water
  7. 2 tbsp butter

Making

  • Peel the beets and cut into medium- thick slices. Set aside. In the top of a double boiler, combine all the other ingredients except the butter. Stir until smooth. Cook over hot water, stirring constantly, until the mixture is smooth & clear.
  • Add the beets and butter. Continue to cook, stirring occasionally, until the beets are heated, about 10 minutes. Serve hot.Harvard beets
